    Advantages
    • Can be used in combination with othger sweeteners to decrease their side-taste. It has the mosty sugar-like taste of all sweet proteins (Saraiva et al., 2023).
    • Tested on animal models and concluded to be safe, showed no allergenic, cytoogenic or mutagenic properties (Novik et al., 2023)
    Challenges/risk factors Contains four disulphide bonds that have to be folded correctly for the protein to be funcional. Certain host strains might struggle with this (Farag et al., 2022).
